Simple Avocado & Prawn Salad

INGREDIENTS
METHOD

2 Avocados, depipped and sliced

6 large lettuce leaves

300g cooked prawns, shelled
-
50g cashew nuts
-
chopped parsley
-
Salt and Pepper to taste
Dressing
-
1 cup mayonnaise
-
3 tablespoon lemon juice
-
1 tablespoon tomato sauce
-
1/4 tsp cayenne pepper
-
Season the avocados with salt and pepper.
-
Place lettuce leaves on one side of the plate, followed by prawns, then avocados.
-
Combine dressing ingredients and pour over prawns.
-
Garnish with parsley and serve.
